Here are the yellow flakes we pressed in 2024, they are leaves which were too mature when picked and lost all their moisture in the wok. At the end of each season, we sort them out with a fancy big machine. This cake is made of the autumn 2023 and Spring 2024 harvest, with only leaves from ancient tea gardens. 

 

These leaves are sorted out because they taste sweet and not as punchy as the normal leaves. They give a very soft brew and are especially well suited for casual sipping from a big glass.
